Un legado de 300 años.

Bajo los auspicios de la familia Martell desde 1715, Martell, la más antigua de las grandes casas de coñac, utiliza su know-how para crear cognacs que han sido conocidos y apreciados durante tres siglos. Un legado de 300 años. Una exigencia que da prioridad al gusto y pone de relieve la experiencia de la profesión. Un saber hacer transmitido de generación en generación para crear coñacs que son servidos y apreciados en todo el mundo - a bordo del Orient Express o del Concorde, o durante expediciones polares y bodas reales.

El Terruño.

El área de cultivo de la uva de Cognac se encuentra en la región de Charente de Francia, cerca de la costa atlántica. La propia región de Cognac se divide en seis áreas de viñedo, o crus. Esta tierra blanca, bendecida por el sol, tiene un clima oceánico templado que fomenta el crecimiento óptimo de la variedad de uva predominante de la región, Ugni Blanc. Es la riqueza y complejidad de los diferentes crus lo que le da al coñac sus famosas características: Suavidad y elegancia con notas de fruta confitada, especias suaves y flores. Las uvas que crecen en los suelos de arcilla de sílice de los Borderies le dan a sus eaux-de-vie aromas florales distintivos y una suavidad excepcional. Es este terroir único, el que le da a los mejores coñacs Martell su distintivo elegancia y sutileza.

Destilación.

Burbujeando en alambiques de cobre, el vino blanco, elaborado con uvas cosechadas en la región de Cognac comienza su transformación en brandy. Este es el proceso de destilación. Para garantizar un sabor auténtico, todavía se usan alambiques de cobre tradicionales para calentar el vino. A medida que se evapora, el vapor sube a través de la cabeza inmóvil, atraviesa el cuello del cisne y entra en el serpentín, donde se condensa para formar un licor transparente y cálido. De las grandes casas de coñac, Martell es el único que destila vinos exclusivamente claros, es decir, que no tienen sedimentos ni impurezas, para producir aguardientes de excepcional finura y pureza, con el fin de producir eaux-de-vie excepcionalmente fino que revela todos los aromas de las uvas. Para transformar el vino afrutado en el eau-de-vie perfecto, es una operación muy delicada que requiere la atención del Maestro Destilador y su equipo. El tiempo y la temperatura del proceso de destilación deben controlarse a la perfección.

Envejecimiento.

En la oscuridad y el silencio de las bodegas, el brandy es paciente. Días, meses, años. El tiempo corre en cámara lenta. Durante este tiempo se produce una transformación en las barricas de roble. La madera de roble es un material vivo que da al aguardiente su estructura y su hermoso color ámbar. Porque es la madera la que permite al aguardiente adquirir la última faceta de su personalidad aromática. Martell siempre ha utilizado barricas de roble de grano fino que liberan aromas dulces y equilibrados y transmiten aromas de vainilla, frutos secos, frutos rojos, chutney y flores secas al coñac eaux-de-vie. La madera utilizada por Martell procede de encinas cultivadas en bosques de tipo Tronçais. Los robles se plantan en filas apretadas, lo que reduce la luz recibida por los árboles jóvenes y ralentiza su ritmo de crecimiento. El roble así producido ofrece una madera de grano fino, llamada así porque los anillos que reflejan su crecimiento son más apretados. Las barricas fabricadas con este tipo de madera confieren al aguardiente madurado un aroma leñoso más fino y ligero en el paladar.

Maduración.

Una cuestión de tiempo... Algunos aguardientes maduran en 2 años, el período mínimo de envejecimiento para el coñac, mientras que otros necesitarán 20 o 70 años. Todo depende de la apreciación del maestro bodeguero, que decidirá cuándo los aguardientes han alcanzado su pleno potencial. Los aguardientes se extraen de sus barricas de roble y se trasladan a las dames-jeannes, deteniendo el proceso de envejecimiento para que los aguardientes mantengan su perfecto equilibrio. Los más preciados se conservan en la bodega Jean Martell, que alberga algunos aguardientes de varios siglos de antigüedad; siglos más tarde, se utilizarán para elaborar los coñacs más raros. Cada aguardiente tiene un carácter único, que resulta de las elecciones realizadas durante su crianza, como el tipo de barrica utilizada, el tiempo de maduración y la añada de la que procede. Como en una compleja sinfonía compuesta por múltiples notas, el maestro bodeguero debe saber combinar y ajustar los diferentes elementos para crear una perfecta armonía.
