Siendo orgullosos propietarios de algunos de los principales viñedos de la región, siempre han tratado de mantener la identidad y la autonomía de cada propiedad. Ornellaia, conocida como una de las bodegas más emblemáticas del mundo, ha alcanzado la flor de su desarrollo bajo la propiedad de la familia Frescobaldi. Ornellaia es una de las propiedades pertenecientes a la familia, junto con ATTEMS (Friuli) MASSETO, DANCANTE, LUCE DELLA VITE y las seis propiedades FRESCOBALDI Nipozzano, CastelGiocondo, Pomino, Ammiraglia, Castiglioni y Remole.
Filosofía.
La filosofía de producción de la empresa se centra en un objetivo: La calidad. Por lo tanto, cada elección adquiere una importancia extrema e implica una atención absoluta al detalle. No se permiten atajos en ninguna etapa del proceso de producción: Esta es nuestra forma de trabajar y así es como logramos obtener las mejores uvas en función de las características climáticas de cada cosecha.
Durante la cosecha, los análisis y las pruebas empíricas nos permiten elegir cuidadosamente los racimos a cosechar. La degustación de las uvas permite evaluar mejor la maduración de los taninos y el equilibrio de los racimos, para establecer el mejor momento para la cosecha y la técnica de vinificación de las uvas de cada parcela. Sometemos las uvas a una doble selección: una primera tabla de clasificación para la verificación de calidad, luego una segunda verificación para la eliminación de cualquier vegetación residual. Las uvas de cada crucero se fermentan por separado, ya que cada vino base contribuye a la creación de la mezcla final, en virtud de las condiciones específicas del viñedo de origen: combinación de suelo, exposición climática y, por supuesto, el tipo de variedad de uva. Solo después de un año de envejecimiento en barrica, los vinos base se ensamblan según los dos criterios principales: La expresión de la elegancia inherente al espíritu de Ornellaia y el estilo vintage.
El terroir.
Medio oculto al pie de las colinas cerca de Bolgheri, Ornellaia se encuentra a pocos kilómetros de la costa mediterránea. En los meses de verano, la fresca brisa marina acaricia los viñedos y los olivares cercanos, mientras que durante el invierno las colinas protegen de los fríos vientos del norte. Ornellaia cree que un vino debe ser la expresión más auténtica del terroir del que proviene y, aquí mismo, combinado con el clima marítimo, la naturaleza heterogénea de los suelos de la finca, de origen marino, aluvial y volcánico, crea un ambiente distintivo donde las variedades rojo y blanco pueden expresarse mejor. Las infinitas parcelas de viñedo son parte de este paisaje incontaminado como las teselas de un gran mosaico, creando una obra de extraordinaria belleza, complejidad y elegancia en un lugar verdaderamente único. La experiencia, la competencia y la determinación han contribuido a mejorar la calidad y la reputación de Ornellaia, pero es el patrimonio en sí mismo una fuente continua de inspiración, que siempre sugiere formas nuevas y exclusivas de capturar su gran generosidad.
La cosecha.
En Ornellaia creemos firmemente que un gran vino solo se puede hacer con alta precisión en la vendimia en el momento adecuado, en función de las condiciones climáticas de ese año en particular. Confiamos en una observación paciente del viñedo y una degustación meticulosa de las bayas para encontrar el momento en que las uvas expresen todo su potencial aromático y desarrollen la textura rica y sedosa de los taninos, manteniendo la frescura y el brillo. Cada viñedo se trata individualmente, mientras que las uvas están sujetas a una doble selección para confirmar la calidad de los racimos y eliminar cada rama de vegetación.
