La touriga nacional es una variedad de uva tinta considerada por muchos como la mejor de Portugal donde alcanza desde las tierras de los vinos verdes del Miño hasta la región vitícola del Algarve. Se atribuye la introducción de esta cepa a los fenicios. A pesar del bajo rendimiento de la vid, por lo pequeño de sus uvas, tiene un papel desacado en las mezclas de los vinos de Oporto. Cada vez se usa más como uva de mesa en la DOC Douro y en Dão. Para Jancis Robinson, la touriga franca es a la touriga nacional lo que la cabernet franc a la cabernet sauvignon. La touriga nacional provee de estructura al vino y la touriga franca completa su buqué. Así como Australia tiene a Syrah como su principal variedad de uva, en España es la noble Tempranillo la referencia en sus vinos y en Argentina la uva Malbec es la reina, la touriga nacional es la uva mejor considerada y más noble de Portugal.
A pesar de ser fértil, es decir, se adapta bien a diversos terrenos, la Touriga Nacional tiene baja productividad debido a su carácter de elevado vigor fisiológico y también al corrimiento del racimo causado por su alta sensibilidad a los cambios climáticos. La producción media es de un kilo al 1,5 kg/cepa; causa del abandono de su cultivo. Es una variedad de brotación y floración tempranas, alcanza la madurez a mediados del periodo de vendimia. Prefiere suelos poco profundos y pedregosos. Los racimos de la touriga nacional son de tamaño pequeño, de forma cilíndrico-cónica y de media compacidad. Las bayas son de color negro azulado, de tamaño mediano, ligeramente aplanadas y con un hollejo medio grueso. Los pequeños granos de touriga nacional tienen una alta relación piel-pulpa, lo cual aumenta la extracción en el vino, A partir de estas uvas pueden obtenerse vinos muy aromáticos e intensos, con un alto contenido tánico. Su cultivo exige cuidados especiales, ya que su maduración es intermediaria; virtudes como rusticidad y fuerte resistencia a plagas, sin embargo, hacen de ella una casta especial.
Como antes hemos dicho, es una uva portuguesa, y es en Portugal donde está más implantada, desde la Región de los Vinos Verdes de Minho hasta la zona vitivinícola de Algarve, abarcando una superficie total cercana a dos mil hectáreas de viñas, según el instituto de la Viña y el Vino de Portugal. En la región de Douro es donde esta cepa tiene mayor presencia, elaborándose a partir de ellas los vinos tintos Douro y Oporto Vintage. Se dice que es en Dão donde la variedad logra el mayor equilibrio, gracias a los suelos de la región, graníticos y arenosos, y a su clima, más frío en invierno y más moderado que en el Douro en verano. Es obligatorio su uso, al menos en un 20%, en la elaboración.
Esta variedad de uva touriga nacional da vinos tintos muy aromáticos e intensos, con una alta carga tánica. Las pequeñas uvas de touriga nacional tienen un alto ratio de piel con respecto a la pulpa, lo que aumenta la cantidad de extracto seco en la elaboración del vino. Estas uvas pueden producir un vino intenso muy aromático y con una alta cantidad de taninos. Es una variedad muy empleada en ensamblajes de vinos no fortificados, y la base de muchos oportos legendarios. La touriga nacional es versátil y produce vinos diversos, pero siempre elegantes, con un buen grado alcohólico, una gran concentración de color, alta complejidad, taninos finos, sabores intensos, volumen, equilibrio y aromas florales distintos. Esta variedad de uva es muy versátil, pudiéndose elaborar con ella vinos espumantes, tintos secos finos, vinos licorosos. La característica principal de la touriga nacional es doptar al vino de estructura y cuerpo, así como de una alta cantidad de taninos y de sabores a frutos negros.
