Cuando el piojo de la raíz de la vid filoxera llegó a Madeira a fines del siglo XIX y mató a las vides, los isleños replantaron con vides híbridas estadounidenses, que eran resistentes a la plaga. Desde entonces, se han plantado variedades europeas nuevas y mejores, pero quedan muchas vides americanas. Los lugareños todavía beben vinos de mesa con un aroma curioso, hechos de uvas híbridas estadounidenses (están prohibidos para los vinos DOP e IGP). Los primeros exportadores de vinos de Madeira se dieron cuenta de que sus productos delicados viajaban mejor cuando estaban fortificados con un poco de brandy. También descubrieron que algo milagroso sucedió durante largos viajes por el mar a través del ecuador: el sabor se volvió intenso y a nuez. Los productores de Madeira aprendieron a imitar este fenómeno envejeciendo barriles de vino fortificado al sol, bajo techos de vidrio en sus almacenes, durante años, un proceso que llamaron canteiro. Luego descubrieron un atajo para sus vinos menos costosos: calentamiento controlado en estufas (estufas), un proceso conocido como estufagem. Tres meses de estufagem se aproximan a cuatro años de canteiro, aunque los resultados son menos sutiles. Los viñedos de Madeira están fragmentados en pequeñas parcelas a lo largo de terrazas excavadas en las laderas volcánicas. La mayoría de las vides están entrenadas en pérgolas. Las uvas se cosechan entre mediados de agosto y mediados de octubre, los pequeños productores entregan a veces pequeñas cantidades de uvas. La fermentación se interrumpe mediante la adición de alcohol neutro de origen vitícola una vez que las levaduras han usado una cantidad adecuada de azúcar de uva para dejar la dulzura deseada. Tradicionalmente, algunas de las variedades históricas de uva blanca de la isla están asociadas con vinos de ciertas dulzuras: Sercial dejado seco, Verdelho semiseco, Bual (o Boal) semidulce, y Malmsey (o Malvasia) positivamente dulce. Las cuatro uvas tradicionales son escasas, una uva roja más abundante, Negra Mole, se convierte hoy en vinos de Madeira de todos los niveles de dulzura. Los mejores vinos DOP Madeira todavía se hacen de las cuatro uvas blancas, además, ocasionalmente, Terrantez. Los vinos se clasifican por método y duración del envejecimiento, así como la uva. Los vinos Colheita o Single Harvest se elaboran con uvas blancas tradicionales o Tinta Negra, maduradas en madera durante al menos cinco años. Los vinos de la vendimia, Frasqueira o Garrafeira deben elaborarse por el método del canteiro a partir de una de las uvas blancas tradicionales, luego envejecer en madera durante 20 años.
La gama de tipos de vino de Madeira se basa principalmente en las variedades nobles de las que se elaboran y de las que reciben los nombres para los que están disponibles para el consumidor. Los más importantes son: "Serial": El color ámbar más seco con reflejos naranjas, un ramo de almendras y un carácter firme. "Verdelho": Menos seco que el anterior, de color ámbar o amarillo pardusco, con aroma de almendras, sabor medio seco y muy equilibrado. "Boal", medio dulce, rico en aroma y sabor. "Malvasia", muy aromática y suave y también muy dulce. "Terrantez", ciertamente el más raro, tiene características de transición entre Verdelho y Boal. Las uvas autorizadas son: Verdelho, Malvasia Fina (Boal), Sercial, Malvasia, Folgasão (Terrantez), Chardonnay, Chenin, Bastardo, Cabernet Sauvignon, Complexa, Deliciosa, Merlot, Tinta Barroca, Tinta Negra, Touriga Francesa y Touriga Nacional. Y las uvas principales: Tinta Negra, Sercial, Boal, Malvasia, Terrantez y Verdelho.
