Español [ ES ]Saint-Estèphe es un verdadero vino "terroir". La influencia del suelo, gravas como de costumbre y más arcillas que en Médoc, se puede experimentar al probar un vino Saint-Estèphe. Aunque Pauillac está cerca, los vinos de Saint-Estèphe son diferentes. Los vinos de Saint-Estèphe son muy coloridos, terrosos, firmes, robustos y tánicos. Todas estas condiciones permiten que las principales variedades de uva de la denominación: Cabernet Sauvignon, Merlot, Cabernet Franc, Malbec y Petit Verdot, den todo su potencial. Alcanzan su madurez más lentamente que otros vinos de Médoc. Saint-Estèphe alberga 5 Grands Crus Classés (grandes crecimientos) como Château Montrose y Château Cos d'Estournel. Con una superficie de 1.370 hectáreas, el AOC Saint-Estèphe produce 68.946 hectolitros de vinos caracterizados por el poder, la estructura y la riqueza de los taninos, proporcionando a estos vinos un gran potencial de envejecimiento. El Cabernet-Sauvignon es una variedad de uva tardía en el clima templado de Burdeos. Esta es la razón por la que madura bien en suelos de grava, orientados a la grupa, con baja capacidad de retención de agua y, por lo tanto, calientes porque no son muy húmedos. Petit Verdot es una variedad de uva tardía. Ofrece al vino sus taninos apretados y rectos, así como su frescura. De las variedades de uva, el 50% es Cabernet-Sauvigno, el 40% Merlot, el 7% Cabernet Franc y el 3% Petit Verdot.
El viñedo Médoc se extiende sobre una franja de tierra de 7 km de ancho y 70 km de largo que bordea la Gironda y que incluye crestas de grava fragmentadas por numerosos ríos perpendiculares al estuario. Estos ríos, llamados "esteys", fueron durante mucho tiempo fronteras locales reales y, por lo tanto, marcaron la organización social de la región y el nacimiento del AOC de Médoc. El estuario de Gironda es precioso porque actúa como regulador del clima oceánico templado de la región. Por su parte, la influencia oceánica trae 80 días de niebla y 160 días de lluvia al año, teniendo una media pluviométrica de 900 mm de agua al año, con su máximo en diciembre y teniendo el mes más seco en julio. La primavera es suave y húmeda en esta región. Las lluvias son tanto más abundantes a medida que nos acercamos al océano. La temperatura media anual es de 13°C en el borde de la Gironda y disminuye a medida que uno se aleja de ella. “Al oeste de Pez, hay menos alivio y la influencia de la Gironda se está desvaneciendo. Los viñedos son menos ventosos, más tarde y por lo tanto menos interesantes ", explica Nicolas Labenne, director técnico de Les Ormes de Pez.
El AOC Saint-Estèphe cubre el territorio de la ciudad del mismo nombre. Sus fronteras: el pantano de Reysson al norte y el Jalle du Breuil al sur. El terreno particularmente montañoso que caracteriza al AOC es de gran utilidad vitícola.
