Sarral está situado en medio de la Conca de Barberà, comarca de arraigada tradición vinícola. Los restos arqueológicos romanos encontrados en Sarral certifican la existencia de esta cultura en la cual los vinos tenían una gran importancia. Pero no será hasta la edad media que el cultivo de la viña tendrá un papel de primer orden. Una cualidad característica diferenciadora es el papel que tuvieron los monjes del Cister y del Templo establecidos a la comarca, los cuales transmitieron su experiencia. El cultivo de la viña dió otro paso de gigante a partir de mediados del siglo XIX. La exportación de vino y aguardiente hacia al norte de Europa y el continente americano convirtió la viña en un cultivo casi exclusivo. La filoxera, arruinaría completamente aquella época de esplendor. La miseria despertó la creatividad, los labradores se asociaron y supieron resurgir con renovado empuje creando las primeras “Sociedades”; fruto del esfuerzo colectivo por unificar los trabajos y conseguir superar una situación económica desesperada, serían los embriones del cooperativismo agrario, que en Sarral empieza a arraigar a las postrimerías del siglo XIX con la creación de la Sociedad de trabajadores agrícolas, que se convertiría en 1907 en el Sindicato Agrícola. Posteriormente en 1913 , se constituía en la villa otra entidad que se denominaría Sindicato de Vinicultores. El año 1959 se fusionaran las dos entidades con el nombre de Cooperativa Vinícola de Sarral.
Filosofía de trabajo.
El inicio de la elaboración de cavas y vinos embotellados durante los primeros años ochenta, la construcción de la primera cava, por ejemplo, data de 1984; posteriormente se fueron ampliando y modernizando las instalaciones primero con la elaboración de cavas, y unos años más tarde, vinos tranquilos, después se siguió con una de las particularidades de la empresa: los vinos de aguja por fermentación natural, con una de las pocas plantas de elaboración de este chispeante vino que tenemos en nuestro país. La decidida incursión de la Cooperativa en los mercados internacionales diez años después son otros escalones que esta histórica entidad de Sarral ha ido subiendo hasta convertirse hoy, cien años tras su fundación –ahora con el nombre Vinícola de Sarral y Sociedad de Crédito, Covisal, SCCL–, en una de las cooperativas más prósperas y dinámicas del sector vitivinícola catalán, referencia y pionera en la implantación de una filosofía dentro el cooperativismo vitivinícola que se rige con criterios empresariales y esta profesionalizada a todos los niveles, desde las viñas hasta la comercialización. Con la calidad como objetivo principal, la cooperativa presta una especial atención al medio ambiente y la continuidad de los viticultores en el territorio.
Instalaciones.
Vinícola de Sarral SCCL tiene emplazadas sus instalaciones, que en varias etapas ha ido ampliando y modernizando, alrededor de la bodega modernista construido el 1914, en una parcela de 12.000 m2 que ocupa en la actualidad todo el recinto, donde se encuentran las diversas edificaciones: las bodegas, las oficinas sitas en un antiguo molino de piensos modernista reformado, las cavas, almacenes, depósitos exteriores, la agrotienda de venta al público abierta cada día, etc, unidas por dos plazas interiores que vertebran el conjunto. Cuenta con más de 100 depósitos de diferentes volúmenes, con una cabida total superior a los 9.000.000 de litros. Las bodegas están equipadas con la última tecnología para tratar los vinos con el máximo cuidado desde la recepción de la uva hasta la botella, con métodos de elaboración de vinos y cavas basados en la enología moderna y con el máximo respeto por el medio ambiente. Hay 2.000 m2 de naves subterráneas donde reposan hasta 2 millones de botellas de cava en segunda fermentación y las salas de crianza en botellas y crianza en barriles de roble. La moderna planta embotelladora cuenta con una rellenadora isobarométrica, tapaderas, etiquetadoras, empaquetadoras, etc. Siendo unos medios de producción en constante evolución para facilitar en todo momento el control necesario para garantizar en los mercados más exigentes la máxima calidad de nuestros productos. Siguiendo una filosofía orientada hacia al futuro, con voluntad de progreso técnico pero sin olvidar nunca nuestra ya centenaria historia.
