La del Chianti Classico es la región más tradicional del Chianti. Constituida como zona vinícola en 1716 por el Gran Duque Cossimo III, esta región se localiza a lo largo de los valles entre Florencia y Siena, es decir, todo el territorio administrativo de los municipios de Greve in Chianti, Radda in Chianti, Castellina in Chianti y Gaiole in Chianti y parte del territorio administrativo de los municipios de San Casciano in Val di Pesa, Tavarnelle Val di Pesa y Barberino Val d'Elsa y Poggibonsi y Castelnuovo Berardenga, y tiene como emblema el histórico gallo negro que ilustra las etiquetas de sus vinos. En esta región no se permite la elaboración del Chianti DOCG y los productores se han esforzado en elaborar un estilo de vino al mismo tiempo más elegante y estructurado, capaz de competir con la opulencia de los mejores Sangiovese de la comarca.
La elaboración.
Las nuevas normas prevén la posibilidad de utilizar uvas Sangiovese de un mínimo del 80 al 100% para el Chianti Classico (en este caso estamos hablando de Sangiovese pura). Una vez que las uvas blancas han sido retiradas, el 20% de la mezcla de uvas puede estar constituido por otras uvas tintas. Difundidas en la zona están las Canaiolo, Colorino u otras variedades como Cabernet y Merlot. Hay que tener en cuenta que un nuevo viñedo de Chianti Classico sólo puede entrar en producción 4 años después de la plantación y que el rendimiento máximo (rebajado por las últimas normas) se establece en 75 quintales por hectárea. El vino Chianti Classico puede presentarse para el consumo a partir del 1 de octubre del año siguiente a la cosecha. La Reserva tiene que ser envejecida durante al menos 24 meses, de los cuales al menos 3 meses, deben estar en botella.
Características organolépticas y maridaje.
La normativa que regula la DOCG, identifica el aroma de violeta como una de las principales características del Chianti Classico. El color debe ser rubí brillante, con tendencia al granate con el envejecimiento. El sabor es armonioso, seco, pero ligeramente tánico. El grado alcohólico es de 12%, 12,5% para el Reserva. Es un gran vino que combina bien con los grandes platos de la cocina toscana, empezando por la bistecca fiorentina (o costilla). Pero también con el jabalí guisado o el pichón al horno. En general, todas las carnes rojas se acompañan bien con el Chianti Classico. Que también se puede tomar al final de una comida con un pecorino o queso de oveja toscano con una maduración de curado a añejo. Para algunos el Chianti Classico puede convertirse en un buen complemento incluso con un cacciucco alla livornese.
