Así, el Pheasant's Tears Saperavi es un vino intenso y terroso, con aromas de moras, grosellas negras maduras y almendras tostadas, con una elegante estructura tánica y muy buena acidez. De final especiado y ligeramente secante. El saperavi, la uva tinta más popular en Georgia, tiene un color tan impenetrable que se llama negro en georgiano. Incluso la pulpa de las bayas tiene color y toda esta carga cromática se traslada a los vinos. Criado durante 9 meses en Qvevri (ánforas enterradas en tierra).
