Masciullo Negroamaro 75 cl.
El área de Salento IGT se encuentra en la parte más meridional de Puglia. El territorio correspondiente a esa parte de Puglia, de aquella era conocida como Messapia, que estaba habitada alrededor del siglo VIII a.C. El territorio de Salento es una tierra entre dos mares, el Adriático en el este y el Jónico en el oeste. Es básicamente un territorio plano, salvo algunas áreas en el sur, que corresponde con esa parte del territorio llamado "Serre Salentine", y algunos territorios en el norte, que corresponde al final de las colinas de Murgia. Esta zona tiene un clima mediterráneo típico, con veranos largos e inviernos no demasiado fríos. En este territorio se crían diferentes variedades de vides como son el Negroamaro, un símbolo del propio Salento, Primitivo, Susumaniello, Malvasia, Verdeca y Fiano. En toda el área de Salento hay varios vinos con DOP, Denominación de Origen Protegida, incluidos Alezio, Brindisi, Copertino Leverano, Negroamaro di Terra d'Otranto. El área de Indicación Geográfica Protegida de Salento está reservada para vinos producidos a partir de vides del tipo de uva blanca en la siguiente versión: frizzante, spumante, passito; y para los tipos de uva roja en la siguiente versión: rojo, frizzante, passito, novello, rosato, spumante.
Salento IGT es uno de los títulos de IGT más utilizados en Puglia, en el sur de Italia. Abarca esta denominación, el Salento, la península de piedra caliza que divide el mar Adriático del mar Jónico y forma el talón de Italia. En teoría, los vinos Salento IGT pueden ser tintos, blancos, rosados, tranquilos, espumosos (spumante), dulces (passito) o secos. Esto, en teoría, ya que se le da a los enólogos locales mano libre. En la práctica, todavía se hace hincapié en los estilos establecidos de la región desde hace mucho: vinos rojos potentes, secos y rústicos. Los doctores estrella de Southern Puglia son Primitivo di Manduria y Salice Salentino. Las variedades principales de uva son Primitivo , Negroamaro y Malvasia Nera, que también son la clave en los vinos Salento IGT. El aromático rojo Aleatico y el poco conocido Susumaiello también juegan un papel importante. También lo hace la variedad Fiano , entre los diversos vinos IGT Bianco, menos comunes. La lista de variedades de uva autorizadas para su uso en los vinos Salento IGT es sustancial, con un número de alrededor de 50. Este es un síntoma del movimiento del sur de Italia hacia la elaboración y etiquetado de vinos varietales para ganar cuota de mercado entre los bebedores menos conocedores. Como es común para los títulos de IGT, la lista es una mezcla de clásicos italianos y las variedades populares a nivel mundial. Las uvas italianas populares y ubicuas como Sangiovese , Montepulciano y Pinot Grigio se pueden usar en para hacer vinos Salento IGT. El elenco mundial incluye a las potencias francesas Cabernet Sauvignon, Merlot y Chardonnay. Las mezclas Salento IGT Rosso, Rosato y Bianco pueden contener cualquier proporción de cualquier variedad permitida dentro de la zona de cultivo. Los vinos varietales deben contener al menos el 85 por ciento de la variedad en la etiqueta. Los vinos de doble variedad deben contener 50-85 por ciento de la primera variedad y 15-50 por ciento de la segunda. Las mismas reglas se aplican a passito rosso o bianco, vinos de cosecha tardía y spumante bianco y rosato. El Salento abarca las tres provincias más al sur de Puglia, Taranto, también cubierto por el título Tarantino IGT, Brindisi y Lecce. Por lo tanto, el área vitivinícola cubierta por el título Salento IGT se extiende 180 kilómetros, 100 millas, de norte a sur. Se extiende desde las playas de arena blanca de Leuca, pasando por la ciudad portuaria de Taranto y el cañón Gravina di Laterza y llegando hasta la frontera con Basilicata.
En esta zona de Puglia,el terroir cálido, plano y seco. Cuanto más cerca de la costa se da un respiro del famoso sol del sur de Italia, que tiene el apodado de "Il Mezzogiorno", "el mediodía", refiriéndose al incesante sol y calor de la zona sur o meridional. El paisaje está dominado por olivares en una proporción muy diferente a cualquier otra parte de Italia. Puglia produce casi la mitad del aceite de oliva de Italia. Los viñedos también son prolíficos aquí, a pesar de los esquemas de extracción de vid de la Unión Europea de finales del siglo XX. Sin embargo, básicamente, la mayor parte del terreno está plantado de olivos.
