Español [ ES ] Tequila Cabeza se elabora con agave de la región Los Altos, en Jalisco, que se cultiva bajo la atenta mirada de la familia Vivanco, que llevan cultivándolos durante 5 generaciones en su rancho de 800 hectáreas. Los jimadores los recolectan a la edad de 7 a 9 años cuando el agave ya tiene un contenido en azúcar del 23-28%. Las piñas se cuecen durante 24 horas a 100ºC y después se dejan enfriar para introducirlas manualmente en el molino. Ahí se separa el jugo de las fibras y se le añade agua natural. El zumo de agave fermenta con la ayuda de levaduras de champagne en tanques durante los meses de primavera. Se filtra solo después de la primera destilación y no se utilizan técnicas de oxigenación. Antes de embotellarse, el tequila permanece, además, en tanques de acero inoxidable durante 60 días. En nariz, se percibe el terroir y la miel del agave, así como capas herbáceas y un toque mineral. En boca es robusto, con toques cítricos, semillas tostadas y especias con un temperamento afrutado. Un tequila que quiere preservar al máximo el carácter del agave.
