De las dos destilerías de whisky de malta de Nikka, Yoichi la malta más sabrosa, masculina y con aromas a turba. El whisky recibe su distintivo aroma y el cuerpo de la destilación de calentamiento directo, en el que los alambiques se calientan con carbón natural, en polvo fino - el método tradicional que no se usa casi nunca hoy en día, incluso en Escocia. La ubicación para la destilería Miyagikyo fue seleccionada para la producción de whisky por su aire limpio, sólo la humedad adecuada para el almacenamiento, y la abundante agua subterránea que se filtra a través de una capa de turba. En Yoichi, Masataka Taketsuru vio numerosos recordatorios de Escocia, y esto lo convenció de que este debe ser el hogar de los whiskies japoneses. Nikka se distingue por ser la destilería japonesa galardonada con el prestigioso certamen internacional Spirits Challenge 2015. Una marca que nace en los años 30 y cuyo fundador es Masataka Taketsuru. Un japonés que en el año 1918 decide recorrer medio mundo para llegar a tierras escocesas y aprender el arte de la destilación. Su estancia en este lugar fue de lo más pintoresca y quedó cautivado por el whisky de la zona y sus principales características. Esto le llevó a regresar a su tierra, Japón, para construir la primera destilería de whisky japonés en Asia cerca de 6 años después de su viaje. Así empezó a elaborar su propio Whisky Nikka, y sus dos posteriores destilerías en la zona de Yoichi y Miyagikyo. Taketsuru, conocedor de la técnica, fue muy meticuloso con la elección de cada paraje natural, teniendo en cuenta los recursos de la zona, el aire y el entorno natural en general para conseguir un whisky de primera calidad. Por este motivo, hoy podemos decir que Nikka es la destilería de whisky premium mejor valorada del mundo.
El iniciador de todo.
No fue hasta 1923 que se funda la primera destilería en Japón, de la mano de Shinjiro Torii, fundador de Suntory y Masataka Taketsuru, considerado el padre del whisky japonés, quien descubrió el secreto para hacer el autentico whisky. Hijo de una familia productora de Sake, estudió en la Universidad de Glasgow y trabajo en las hoy desaparecidas destilerías de Hazelburn y Longmore de Speyside, Escocia. Regresó a Japón y comenzó su labor para fundar la que sería la primera destilería de Suntory: Yamazaky en ese 1923. De hecho, cuenta la leyenda, nos dice Oscar Ardid, que desde 6 años antes, Suntory comenzó a comprar a los productores sus granos y cebadas: se veían las filas de productores entrar, dejar sus productos y salir; pero nunca se veía el producto final. Nunca se veía que el whisky se estuviera produciendo. La leyenda contaba que en esa destilería vivía un dragón que consumía todo lo que ahí entraba. Fue hasta 6 años después, en 1929, que salieron a la venta las primeras botellas de destilado que por fin lograron obtener los ahumados, sabores especiados y aromas complejos de los destilados escoceses y tener un producto de alta calidad. “Más que el dragón, esto es una gran metáfora de lo bien hecho de los procesos de los japoneses: tienen la paciencia y la pertinencia de no defraudar el honor de sus productos hasta que estén perfectamente listos”. Se había fundado la primera destilería de whisky japonés, que hoy acumula y acumula premios. Por ejemplo del 2010 al 2014 fue premiada por la Whisky Magazine como la mejor destilería del mundo.
La segunda destilería
Aunque Masataka Taketsuru, había colaborado en la fundación de esta primera destilería, no pararía hasta cumplir su sueño de fundar la suya, y en 1937 lo logra y funda Nikka en la isla septentrional de Hokkaido, en la provincia de Yoichi. De hecho, hoy se dice que esta destilería es la que cuenta con la mejor agua del mundo para hacer whisky por su pureza y ausencia de hierro. A partir de ahí la explosión de destilerías y productos de alta calidad comenzaría. Coincide además que de 1939 a 1945, con la Segunda Guerra Mundial y la ocupación norteamericana en Japón, como era de esperarse, se dispara el consumo de cerveza y de whisky en Japón. Después del 63 al 72, por la post guerra los impuestos al whisky descienden los precios de destilado japonés también, haciendo que el consumo aumente también a nivel mundial y se empiece a escuchar a hablar más de ellos en los concursos internacionales. Fue en este periodo también donde Suntory y Nikka comienzan a mejorar, aún más, sus procesos y su búsqueda de un sabor auténtico, comenzando a usar roble japonés para sus barricas y se instalaron en lugares con condiciones similares a las escocesas, rodeados de bosques y montañas. Actualmente en Japón existen 11 destilerías, todavía distan mucho de las 109 existentes en Escocia. Sin embargo le han apostado a la calidad y a los procesos para competir contra estos.
