Después de su primer vino Puro Rofe en la isla de Lanzarote, saltaron a la isla de El Hierro en 2018. El territorio es un auténtico paraíso vitivinícola, con una reserva de variedades autóctonas únicas y con una rica diversidad de suelos y de climas. Trabajan su propio viñedo en ecológico, así como el arrendado a otros pequeños viticultores. Bimbache Blanco es un ensamblaje de verijadiego blanco, listán blanco, baboso blanco, gual y pedro ximénez. Apenas 2.000 botellas de un blanco singular fantástico acompañando erizos, ortiguillas, caixetes y todo tipo de salazones y conservas del mar.
