La viticultura es cosa de familia para Natalino Crognaletti, quien dirige Fattoria San Lorenzo como antes lo habían hecho su padre y su abuelo. De ellos asimiló el amor por la verdicchio y el arte de vinificarlo para sacar de esta variedad toda su expresión y peculiaridades. Con el asesoramiento del enólogo Hartmann Donà (un conocido productor de vinos en Alto Adige), Natalino elabora unos Verdicchio puros y auténticos. En el viñedo la intervención se reduce al mínimo y apenas incluye tratamientos con cobre, azufre o preparados biodinámicos cuando es estrictamente necesario. Campo delle Oche se presenta con un brillante color dorado y una óptima y casi oleosa consistencia que hacen pensar en una crianza en madera aun cuando no ha sido así. El proceso de elaboración de Campo delle Oche tiene lugar únicamente en contenedores de acero y en depósitos de cemento donde sigue una crianza sobre sus lías durante más de tres años. En nariz impone respeto y revela de inmediato su considerable contenido alcohólico, suavizado y mitigado por su potente sabor y frescura, e integrado óptimamente en la estructura del vino.
