Bodegas HABLA (Bodegas y Viñedos de Trujillo) es una joven bodega de Extremadura pero es también un valioso proyecto de investigación y desarrollo (I+D) al servicio de la viticultura y la vinificación.
Desde la bodega se ha apostado por las técnicas más avanzadas y la más moderna tecnología, y ha sabido rodearse de grandes expertos a la hora de elaborar sus vinos, vinos únicos e irrepetibles para cada añada que comercializa bajo una misma marca, Habla, con un diseño original e identificados por un número: Habla Nº 1, Habla Nº 2 y Habla Nº 3 en la primera añada (2005), Habla Nº 4 y Habla Nº 5 en la segunda (2006). Porque, cada año, "la naturaleza crea obras únicas. Por eso Habla tiene su propio número".
Nuevas apuestas.
En 2001 nace Bodegas Habla con la intención de cambiar la mentalidad del mundo del vino sobre los elaborados en Extremadura. Para ello, la firma de Trujillo emprende una parcelación de los pagos que iban a cultivar con una gestión individualizada para cada uno y cada variedad. Desde ese momento, se inicia la creación de los vinos de una casa que en sólo diez años destaca por ser pionera en el estudio del potencial aromático de la uva para determinar la fecha de la vendimia, en la influencia del riego en la capacidad aromática de la uva o en la selección de levaduras autóctonas. En su numeroso equipo de profesionales, Agudo cuenta con el enólogo Florent Dumeau, y con unas tierras aún por descubrir, las de Extremadura. El viñedo está dividido en 68 parcelas en las que se realizan análisis científicos del suelo y de sus características climáticas con técnicas como la teledetección o la fotografía de infrarrojos. La uva recién vendimiada se selecciona a mano. Durante este proceso, más de un 25% de lo que se recoge termina descártandose. Para ello, también se realiza una poda en verde, durante las primeras semanas del verano.
Variedades.
Las variedades elegidas para plantar fueron algunas autóctonas, como la Tempranillo, pero también foráneas como Cabernet sauvignon, Syrah y Petit verdot. Estas variedades expresan los rasgos del terruño en su máximo esplendor. En la Tempranillo es la voluptuosidad, en la Cabernet sauvignon el carácter, en la Syrah es la exuberancia y en la Petit verdot, la profundidad. El movimiento de la uva, cuando ya está en bodega, se realiza por gravedad para preservar su estado óptimo de cara a la maceración. La uva llega intacta a los depósitos a una temperatura constante de 6ºC. Cada parcela tiene su correspondencia con un depósito en el que la uva macera según sus propias necesidades específicas y se cría igualmente en distintas barricas, siempre de roble francés.
