Desde el sigo XIV.

El documento más antiguo que poseemos sobre la historia de la familia está fechado en 17 de junio de 1395 y refiere que el Señor de Gelida estableció una enfiteusis, (censo), sobre el Mas de la Torrevella, (actual ubicación de la finca Can Martí y de sus Masías, Can Martí de Baix y Can Martí de Dalt), a favor de mi antepasado directo Jaume Miquel, con "todas sus casas, edificios, campos, viñas, tierras, bosques, huertos, honores y otras posesiones, aguas, acueductos, entradas y salidas y todos sus derechos y pertenencias que son del Mas o le pertenecerán en el futuro, sean cuales fueren". A lo largo de los siglos el apellido familiar fue cambiando como consecuencia de los sucesivos matrimonios, hasta el actual, Torelló, que corresponde a la 22ª generación, que conserva la propiedad, haciendo honor al mandato de mi antepasado, que obligaba a que "vos y vuestros sucesores seáis hombres propios y solos, naturales, míos y de los míos, y que hagáis del Mas vuestro hogar, estancia y residencia". La historia más reciente enlaza con mi bisabuelo, Marc Mir, del que en 2004 se ha cumplido el centenario de su fallecimiento, cuya generosidad permitió la replantación de viñedos en el Penedès tras la plaga de la filoxera que arruinó la región a finales del siglo XIX, y por cuyo motivo vio reconocidos sus méritos en Sant Sadurní d'Anoia con un monumento en la plaza del Ayuntamiento y una calle que perpetúa su memoria. A partir de 1951, mi padre, Francisco Torelló, anticipándose al cambio económico del país orientó la trayectoria agraria tradicional de la familia hacia la industrialización vitivinícola iniciando la elaboración de espumoso y vino embotellado, con la uva de las viñas de la finca Can Martí.

La vendimia, garantía de la calidad.

Los vinos y espumosos Torelló se elaboran con un principal objetivo: el cuidado de sus viñas con exigencia y pasión, garantía de la calidad futura. Para ello:
- Se limita la producción del viñedo mediante la poda de invierno y la vendimia verde de verano. En primavera se realiza la poda verde, consiguiendo concentrar las propiedades de la uva, su mejor aireación e insolación, así como la regulación de su crecimiento.
- Se recolecta manualmente las uvas en su punto óptimo de maduración para conseguir un perfecto equilibrio entre el azúcar y la acidez de las mismas.
Se enseña a los vendimiadores para que rechacen aquellos granos o racimos que pudieran no presentar buen estado.
- Se transporta la uva desde las viñas a las prensas en pequeños remolques o cajas de 25 kg, en menos de quince minutos evitando así su oxidación y/o fermentación espontáneas.
- Se pasa toda la uva por la mesa de selección, racimo a racimo.
- Se ha implantado el acero inoxidable en todas las instalaciones en contacto con la uva, por su asepsia y fácil limpieza, desde los remolques/volquete, la tolva de recepción de uva, las tuberías de circulación de pastas, mosto y vino, las prensas y bombas, y los equipos de fermentación, hasta los equipos de frío.
- Se ha incorporado a nuestras prensas la tecnología Inertys, un sistema que protege al mosto de la oxidación durante la fase de prensado de la uva y confiere al futuro vino un suplemento cualitativo indiscutible en su aroma y color. Este sistema también permite reducir la adición de SO2 antes de la fermentación, reduciendo la concentración de sulfitos en el vino.
